2/3 cup Maple syrup
3 tbs(s) Dijon mustard
2 tbs(s) Cider vinegar
2 tbs(s) Soy sauce, light
Combine and stir all ingredients and spread over roast in shallow pan. Surround with 1 lb. carrots and about 4 - 6 medium red potatoes, halved. Marinate overnight.
